This is hands down one of my favorite spirits. The subtle, yet refreshing hint of cucumber lends itself so well to a vast array of cocktail combinations. And of course, it's perfectly suited for serving with just tonic and lime over ice.
You've heard it before, but I'll say it again - when the ingredient list is short, it is critical to make each and every one top-notch. Therefore, in this case it's important to choose a high quality tonic. I like this one and this one is good too.
Here's a recipe for one of my favorite cucumber vodka drinks:
1.5 oz cucumber vodka
.5 oz of orange liqueur
.5 oz of simple syrup - infuse with fresh mint if time permits.
Juice of 1 lemon
Lots of fresh mint
Place all of the above in a shaker filled with ice, shake and pour over a full glass of ice - top with a splash of Prosecco or sparkling Italian lemonade.
Variations on this recipe include - fresh grapefruit instead of lemon, basil instead of mint or agave nectar instead of simple syrup.

You can also infuse your own vodka by placing 1 whole, peeled cucumber in a jar of vodka and soaking overnight.
